This commercial convection oven comes with a  cook and hold function which makes it an incredibly useful catering kitchen appliance! 

Cook and hold function: when pre-set for cook & hold the oven will hold your food warm at a constant temperature of +90℃ once the actual cooking is done.

This convection oven cooks food faster at lower temperature and more evenly than regular ovens. For roasting, set the oven at 160℃, this oven is good for moisture keeping and can prevent food shrinkage. Roasting times can be saved 10 minutes for one kilogram food.
